Ingredients
Burger Patties
450g Quality Mark lamb mince
separated into 4 patties
1 tsp salt
ground black pepper
1 red onion
sliced
4 pieces of sliced cheese
2 Tbsp oil
Whipped Feta
70g feta
110g Greek style yoghurt
1 Tbsp Italian parsley
minced
1 tsp mint leaves
minced
ground black pepper
For Assembly
4 brioche buns
1 Lebanese cucumber
sliced
4 leaves lettuce
1 large tomato
sliced

To Make the Whipped Feta

In a food processor, add the feta and yogurt. Blend until very smooth, about 1 to 2 minutes, scraping down the sides as needed. Add the minced parsley, mint leaves and a few rounds of freshly ground pepper. Give it a taste and adjust the seasoning to taste. Set aside in an airtight container.

You can make the whipped feta up to 5 days ahead and just store it in the fridge in an air-tight container.

Making the whipped feta is 100% optional. You could always just smother on some aioli or mayonnaise and ketchup if you want. But I love the tartness it contributes to the delicious patty of grilled lamb.
