We love this apricot bocconcini recipe. Perfect for an entree, platter or for entertaining, these delectable sweet treats will have your guests raving about them into the night.

Ingredients

12 apricot

bocconcini

cherry or baby sized

a small handful of basil leaves

chopped

1/2 - 1 red chilli

seeds removed and finely sliced

1/3 cup pistachio nuts

lightly toasted and chopped

Method

To Make Salad

Cut apricots in half and remove stone.

Halve each bocconcini and place in the centre of each apricot half.

Alternate chilli and basil as toppings and sprinkle with pistachio nuts.

Remove from the fridge 5 minutes prior to serving so they are not too cold.
