thinly sliced lengthways
250g green beans
200g snow pea sprouts
1/3 cup desiccated coconut
1/2 cup olive oil
1/4 cup lime juice
2 Tbsp soy sauce
2 tsp brown sugar
1 Tbsp sesame oil
3 spring onions
For Coconut, Lime & Sesame Greens
Blanch the broccoli in a pot of boiling water for 2-3 minutes. Remove from the pot and quickly cool under cold water.
Add the beans to the pot and cook for 2 minutes before draining and running under cold water to refresh.
Heat a frying pan over a medium heat and lightly cook the coconut just until golden. Remove from the pan and set aside.
Combine the dressing ingredients together in a small bowl.
Toss the greens together in a salad bowl, drizzle with enough dressing to lightly coat. Toss to combine.
Sprinkle with toasted coconut and serve.
