Ingredients
Chimichurri
1 cup fresh coriander
finely chopped
½ cup flat-leaf parsley
finely chopped
2 Tbsp oregano
fresh
40 ml white wine vinegar
4 garlic cloves
1 lemon
zest and juice
1 pinch ground cumin
1 pinch coriander powder
1 pinch chilli flakes
1 cup sunflower oil
salt
to taste
black pepper
to taste
Method
Chimichurri

Finely chop the coriander and flat-leaf parsley.

Zest and juice a lemon.

Put all ingredients in a mortar and pestle and grind together while slowly adding the oil.
