Got leftover Mexican bolar roast sitting in the fridge and wondering how to jazz it up without spending hours in the kitchen? Say hello to these air fryer beef enchiladas—a cheeky, speedy way to transform leftover beef into a crispy, cheesy, and downright delicious meal. Packed with protein-rich beef and fibre-loaded black beans, wrapped in wholegrain tortillas these enchiladas are a balanced feast that hits all the right notes.
The air fryer crisps the tortillas to golden perfection while melting the cheese just right, giving you that satisfying crunch and gooey goodness without the extra oil. Perfect for busy weeknights when you need to feed the masses, this recipe turns humble leftovers into a vibrant Mexican-inspired dinner.
Ingredients
2 cups Quality Mark bolar roast
use the shreded leftover Mexican bolar roast including the beans and vegetables6 corn tortillas
½ cup orange salsai
½ cup grated cheese
1 cup baby spinach
½ cup Greek style yoghurt
fresh coriander
choppedlime
wedges, for servingavocado
sliced, for servingorange salsa
extra for serving
2 oranges
peeled and diced¼ red onion

1 handful fresh coriander

to taste
Method
In a bowl, combine the shredded beef, beans, vegetables, and a few tablespoons of the cooking juices to keep the filling moist. Stir in a handful of baby spinach for extra greens and micronutrients.
Lay out the tortillas. Divide the beef mixture evenly among them. Add a spoonful of orange salsa to each tortilla.
Roll up each tortilla and place seam-side down in a lightly oiled air fryer-safe baking dish or directly in the air fryer basket.
Sprinkle the grated cheese evenly over the enchiladas.
Air fry at 180°C for 8–10 minutes, or until the cheese is melted and the tortillas are golden and slightly crisp.
Serve topped with a dollop of Greek yogurt, extra salsa, fresh coriander, and a squeeze of lime.
Mix all ingredients and let sit for 10–15 minutes for flavours to marry together.
