The air fryer crisps the tortillas to golden perfection while melting the cheese just right, giving you that satisfying crunch and gooey goodness without the extra oil. Ingredients

Beef enchiladas
  • 2 cups Quality Mark bolar roast

    use the shreded leftover Mexican bolar roast including the beans and vegetables
  • 6 corn tortillas

  • ½ cup orange salsai

  • ½ cup grated cheese

  • 1 cup baby spinach

  • ½ cup Greek style yoghurt

  • fresh coriander

    chopped
  • lime

    wedges, for serving
  • avocado

    sliced, for serving
  • orange salsa

    extra for serving
Quick Orange Salsa
  • 2 oranges

    peeled and diced
  • ¼ red onion

    finely diced
  • ½ red chilli i

    finely chopped
  • juice of 1 lime

  • 1 handful fresh coriander

    chopped
  • salt

    to taste

Method

For the beef enchiladas

In a bowl, combine the shredded beef, beans, vegetables, and a few tablespoons of the cooking juices to keep the filling moist. Stir in a handful of baby spinach for extra greens and micronutrients.

Lay out the tortillas. Divide the beef mixture evenly among them. Add a spoonful of orange salsa to each tortilla.

Roll up each tortilla and place seam-side down in a lightly oiled air fryer-safe baking dish or directly in the air fryer basket.

Sprinkle the grated cheese evenly over the enchiladas.

Air fry at 180°C for 8–10 minutes, or until the cheese is melted and the tortillas are golden and slightly crisp.

Serve topped with a dollop of Greek yogurt, extra salsa, fresh coriander, and a squeeze of lime.

For the quick orange salsa

Mix all ingredients and let sit for 10–15 minutes for flavours to marry together.
