Savoury French toast

This one is for everyone who likes a savoury start to the day. Move over syrupy, claggy French Toast! You're in for a treat with this herby version, cooked till crisp and topped with a poached egg, avocado, sausages and tomato.

Ingredients

For the toast
  • 4 thick slices sourdough

    Wholegrain
  • ¼ cup milk

  • 1 tsp wholegrain mustard

  • 1 Tbsp chives

    chopped
  • 1 Tbsp parsley

    chopped
  • salt and pepper

    to taste
  • 4 eggs

  • 1 Tbsp butter

To serve
  • 4 beef sausagesi

  • 4 eggs

  • 1 avocado

    sliced
  • 1 punnet cherry tomato

    chopped
  • 1 packet micro greens

Method

For the sausages and eggs

Heat a non-stick fry pan to a medium-high heat and place your sausages in the pan. Cook for 15-20 minutes, turning regularly so they cook evenly.

While the sausages are cooking, poach the eggs. Bring a large saucepan of water to a boil, then reduce to low. One by one, crack your eggs into the water, being careful not to splash or have the eggs touch.

For runny yolks, cook the eggs for 3 minutes and then remove from the water with a slotted spoon. Place the eggs on a plate lined with paper towels to soak up the excess water.

Remove the sausages from the pan and set aside with the eggs until it's time to serve.

For the toast

Whisk together the eggs, milk, mustard, herbs, and salt and pepper.

Soak each slice of bread in the egg mixture, making sure both sides are covered.

In a large frying pan heat a little butter until sizzling. Cook each piece of French toast gently until golden on both sides.

Serve the French toast stacked with the beef sausage, egg and avocado. Finish with a few halved cherry tomatoes and micro greens.
