Ingredients
1 packet Angel Bay Gourmet Beef Meatballsi
2 stalks celery stalks
diced1 red onion
finely sliced1 packet edamame beans
cooked1/2 cup fresh coriander
roughly chopped1 Tbsp olive oil
kosher salt
black pepper
6 Lebanese flatbreads
1/2 cucumber
skin and seeds removed3/4 cup Greek style yoghurt
2 garlic cloves
pressed or minced1 handful mint leaves
choppedkosher salt
black pepper
380g hummus
1 Tbsp olive oil
1 Tbsp dukkah
Method
Prepare the tzatziki by grating the cucumber and placing in a paper towel to drain liquid.
In a bowl add the drained grated cucumber, yoghurt, garlic, chopped mint, salt, and pepper and mix well.
Cover and refrigerate until ready to serve.
Prepare hummus by topping with olive oil and Dukkah.
Cover and refrigerate until ready to serve.
Pan fry the Angel Bay Gourmet Beef Meatballs from frozen on a medium heat for 14-15 minutes, turning every 3-4 minutes.
Combine celery, red onion, edamame beans, and coriander.
Add meatballs to the salad mixture and top with olive oil, salt, and pepper.
Warm Lebanese bread according to packet instructions.
Spread hummus mixture onto the pita bread, then top with the salad and meatballs.
Top with a generous serving of tzatziki for a delicious meal.
