Prized for its tenderness, eye fillet doesn't need a lot done with it to bring a sense of occasion to a delicious meal. A fast shortcut using Rum and Que's Bull Dust Meat Rub and you've got a winner of a Christmas dinner without too much effort.

Ingredients

perfect eye fillet
  • 1 Quality Mark beef eye fillet

  • 1 tsp Rum & Que 'Bull Dust' Seasoning

  • olive oil

  • a pinch Rum & Que Truffle Butter

garlic bread
  • 1 baguette

  • ½ cup butter

  • 1 tsp Rum & Que Garlic Butter

to serve
  • salad greens

Method

for eye fillet

Preheat the oven to 180°C.

Season the eye fillet roast with the Rum & Que bull dust meat rub and a drizzle of olive oil. Set aside and allow the meat to come to room temperature.

Heat a large frying pan on high heat and sear the eye fillet roast on all sides.

Once a nice crust has formed, transfer to a small roasting dish and place in the oven. Cooking time: 20-minutes Rare (55°C inside) 25-minutes Medium-rare (60°C inside) 30-minutes Medium (70°C inside) 35-minutes Well-done (70°C inside)

Remove the meat from the oven, cover with tin foil and a tea towel, then allow to rest for at least 20-minutes.

To finish, sprinkle with a pinch of Rum & Que truffle butter.

To make the garlic bread, cut 1.5cm slices (not all the way through) in the baguette. Mix butter with the Rum & Que garlic butter and spread between each slice. Wrap with tin foil and place in the oven until golden and soft.
