Ingredients

Moroccan lamb and chickpeas

400g Quality Mark lamb mince

1 can chickpeas

drained and patted dry with paper towels

2 tsp olive oil

2 tsp onion powder

2 tsp garlic powder

2 tsp ground coriander

2 tsp ground cinnamon

1 tsp ground cumin

pinch salt and pepper

Salad

4 handfuls baby spinach leaves

½ cup Greek style yoghurt

Method

For the lamb wrap bowl

Toast the wraps using an air-fryer or in the oven using an oven proof bowl until golden. Alternatively, you can keep the wraps fresh or slightly warmed through.

Combine the Moroccan spices in a small bowl.

Heat oil in a frying pan and cook the mince with half of the spice mixture until browned.

In a large bowl, toss chickpeas with a drizzle of olive oil and remaining spice mixture then toast in the air-fryer or on a baking tray in the oven until golden.

Prepare salad ingredients and toss together in a large bowl.

In a smaller bowl, mix the yoghurt, lemon juice, and ground sumac together.

Place each wrap in a bowl and fill with salad, lamb mince, and a drizzle of yoghurt sauce. Garnish with fresh herbs and lemon to serve.
