Ingredients

Lamb

500g Quality Mark lamb mince

1 Tbsp butter

1 onion

finely diced

2 garlic cloves

crushed

2 tsp garam masala

1 tsp ground cumin

arrow

1/2 tsp ground turmeric

1/2 tsp ground allspice

juice of 1 lemon

arrow

2 Tbsp fruit-style chutney

100g dried apricots

chopped

arrow

25g flaked almonds

lightly toasted

Topping

arrow

3 eggs

arrow

250ml milk

arrow

A pinch of ground nutmeg

Method

To Bake Bobotie

Preheat oven to 180°C.

Heat butter in a large saucepan and cook onion and garlic (if using) over a moderate heat until softened.

Add minced lamb and cook, stirring often so meat browns evenly and there are no large pieces.

Add salt and pepper to taste.

Remove from heat and combine with remaining bobotie ingredients.

Transfer into a well-greased ovenproof dish.

Spread mixture evenly.

To make topping, whisk the eggs and milk together in a bowl.

Pour over top of minced lamb mixture and sprinkle with a pinch of ground nutmeg.

Put into oven and bake for 30–40 minutes until it is a golden colour.

Sprinkle with almonds and serve.
