Ingredients
Pickle Mayonnaise
4 eggs yolks
1-3 whole McClure’s Pickles

½ tablespoon Dijon mustard
½ lemon
juiced
1½ tablespoons white wine vinegar
1 tablespoon brine
pickle brine from jar
1½ cups oil
light tasting (e.g. grape seed, sunflower, avocado or canola oil)

1-2 cups mayonnaise

Place the egg yolks, pickles, mustard, lemon juice, vinegar and brine in a bowl or blender and blitz until finely mixed.

Then with the motor running, slowly drizzle in the oil.

Season with salt and pepper.

Store in the refrigerator for up to 2 weeks.
