Tender potato gnocchi is paired with seasoned beef or lamb mince, mixed herbs, and a colourful array of roasted seasonal vegetables like broccoli, courgette, and capsicum. Start by browning the mince with mixed herbs, salt, and pepper, then cook your gnocchi until it’s soft and pillowy. Toss in lightly roasted vegetables, juicy cherry tomatoes, and a bed of fresh baby spinach. Top it all off with crumbled feta, a sprinkle of grated cheese, and a drizzle of olive oil. Ingredients

  • 400g lean Quality Mark beef mince

    or lamb mince
  • 1 tsp mixed herbs

  • a pinch of salt and pepper

  • 500g traditional potato gnocchi

  • 4-6 cups seasonal vegetablesi

  • 1 Tbsp olive oil

  • 180g punnet cherry tomatoes

  • 150g feta cheese

  • ¼ cup grated cheese

  • 120g bag baby spinach leaves

Method

Preheat oven to 200℃ and prepare a baking tray.

Combine the mince with herbs, salt, pepper, and roll into balls then set aside.

Chop vegetables and arrange them on the baking tray with the gnocchi, tomatoes, and a drizzle of olive oil. Sprinkle over the feta and grated cheese then bake for 10-15 minutes until golden.

Cook the meatballs on the barbecue or stove top until browned on all sides.

Serve the gnocchi and vegetables in a bowl with a handful of baby spinach and meatballs on top.
