Ingredients
1 red onion
finely diced5 medium-sized tomatoes
seeds removed and flesh dicedHalf a bunch fresh coriander
stalks and leaves chopped2 Tbsp olive oil
sea salt
to tasteblack pepper
to taste½ lemon

Finely dice the red onion.

Remove the seeds from the tomatoes and dice the flesh.

Chop the leaves and stalks of the coriander.

Mix all ingredients together in a bowl.

For an optional kick, add a bit of fresh red chilli.
