Ingredients
Salsa
1 red onion
finely diced
5 medium-sized tomatoes
seeds removed and flesh diced
Half a bunch fresh coriander
stalks and leaves chopped
2 Tbsp olive oil
sea salt
to taste
black pepper
to taste
½ lemon
juice of

Salsa

Finely dice the red onion.

Remove the seeds from the tomatoes and dice the flesh.

Chop the leaves and stalks of the coriander.

Mix all ingredients together in a bowl.

For an optional kick, add a bit of fresh red chilli.
