As seen on social media, these Asian inspired crispy rice paper dumplings are so delicious. A little fiddly to make but totally worth it for that ultimate crisp exterior and the tender middle. Serve with lashings of chilli oil and fresh coriander for a truly tasty feast.

Ingredients
Rice Paper Dumplings
500g Quality Mark beef mince
2 garlic cloves
minced
1 Tbsp lemongrass paste
2 Tbsp fresh ginger
grated
1 Tbsp chopped fresh coriander
2 spring onions
thinly sliced
½ cup green cabbage
shredded
1 carrots
grated
12 rice paper
Dipping sauce
2 Tbsp Chinese black vinegar
2 Tbsp dark soy sauce
2 tsp brown sugar
Method
Rice Paper Dumplings

In a large bowl, mix together the filling ingredients until well combined.

Soak one rice paper sheet in a bowl of water until soft to handle.

Place a heaped tablespoon of filling in the bottom third of the rice paper sheet.

Fold the bottom up and then both sides in.

Make sure to get as many air bubbles out as possible. And then roll away from you to form a stuffed square.

Lay on a lined baking tray and continue with the rest.

Once the tray is full, put them in the fridge for half an hour – this helps to dry out the wrapper for ultimate crisp.

Heat a generous amount of oil in a non-stick fry pan – fry for a couple of minutes each side.

Serve with the dipping sauce and a sprinkle of coriander and tuck in!
