The colours represent the colours of the Chilean flag and this salad brings a classic tomato flavour to a summer BBQ or even the Christmas table.

Ingredients

  • 4 tomatoes

    thinly sliced
  • 1 onion

    thinly sliced
  • 1-2 Tbsp olive oil

  • 2 Tbsp fresh corianderi

    chopped
  • kosher salt

    to taste
  • black pepper

    to taste

Method

Blanch the onion slices in boiling water for three minutes and then drain.

Arrange the slices of tomato on a serving dish and top with the blanched onions.

Dress with a drizzle of olive oil and a sprinkle of salt and pepper and garnish with chopped coriander.
