Ingredients
Salad
4 tomatoes
thinly sliced
1 onion
thinly sliced
1-2 Tbsp olive oil
2 Tbsp fresh coriander

to taste
black pepper
to taste
Method
For the Salad

Blanch the onion slices in boiling water for three minutes and then drain.

Arrange the slices of tomato on a serving dish and top with the blanched onions.

Dress with a drizzle of olive oil and a sprinkle of salt and pepper and garnish with chopped coriander.
