Our take on the classic BBQ Rodeo Cheeseburger. Think crispy onion rings, sweet and spicy BBQ sauce, bacon, and melted cheddar cheese on a juicy beef patty. Try it and you’ll be hooked!

Ingredients

Burger Patties
  • 600g Quality Mark beef mince

  • 1 egg

    lightly whisked
  • 1 tsp garlic powder

  • small handful parsley

    finely chopped
  • 2 Tbsp tomato paste

  • 1/2 tsp Worcestershire sauce

  • 4 slices cheddar cheese

  • 12 onion rings

    crumbed, oven baked or fried
  • 8 slices streaky bacon

    pan or oven-grilled till crisp
Burger Sauce
  • 1 shallot

    finely chopped
  • 3 gherkins

    finely chopped
  • 175g mayonnaise

  • 1 Tbsp tomato sauce

  • 1 Tbsp Dijon mustard

To Serve
  • 4 brioche burger buns

  • 2 Tbsp mayonnaise

  • 3 Tbsp tomato relish

  • 1 small cos lettuce

    washed and leaves separated (optional)

Method

For the Sauce

Place all ingredients into a small bowl, stir to combine. Set aside until required.

To Cook Patties

Divide the mince into 4 equal portions.

Using clean hands, form each portion into round balls.

Heat 2 Tbsp of oil in a large pan. Place mince balls into hot pan and flatten patties with a spatula.

Cook for 2-3 minutes on high heat, then flip patties over. Cover each patty with a slice of cheese, and cover with a lid for a minute. It's ready when patties are slightly charred and cheese has melted.

Remove from pan and set aside.

To Assemble

Spread mayo on cut sides of brioche buns. Toast in a hot oven at 180°C for 10 mins, until lightly browned and crisp.

Spread burger sauce on bottom buns. Place cheese patties over, and top with onion rings, bacon, burger sauce and top bun.

Serve with tater tots and extra tomato relish for dipping.
