Ingredients
600g Quality Mark beef mince
½ onion
finely chopped1 garlic clove
crushed and chopped1 egg
lightly whisked1 toast slice wholemeal bread
crusts removed, soaked in the milk2 Tbsp milk
⅓ cup chives
finely chopped⅓ cup parsley
finely chopped½ cup grated tasty cheddar cheese
2 Tbsp tomato paste
1 Tbsp olive oil
½ tsp Worcestershire sauce
8 slices cheddar cheese
¾ cup mayonnaise
1 shallot
finely chopped3 gherkins
finely chopped1 garlic clove
crushed1 Tbsp tomato paste
1 ½ Tbsp Dijon mustard
4-5 white bread rolls
halved4-5 leaves lettuce
1 red onion
thinly sliced
Method
Preheat the oven to grill.
Place all the patty ingredients in a bowl, season and combine.
Shape into 4-5 patties, cover and refrigerate for 15 minutes.
Preheat a BBQ or frying pan to a medium heat.
Brush the patties with a little oil and cook for a few minutes until crunchy and brown on one side.
Turn the patties over, reduce the heat to medium-low and cook for another 8-10 minutes until cooked through.
Transfer the patties to a roasting dish or oven tray and lay a slice or two of cheese on top of each one.
Cook under the grill for a minute or so until the cheese starts to melt over the patties.
To make the secret sauce, combine all the ingredients and season as required.
Spread the bottom bun with a dollop of sauce, place a patty on top then add the lettuce leaves and slices of red onion.
