Philippa Cameron, aka What's For Smoko, is based on a sheep station in the South Island. Known for her rustic Kiwi fare that feeds her family and busy farm workers, these cheeseburger scrolls hit the spot, especially after a morning at the lake or beach! She's combined your favourite burger flavours and wrapped them in soft, fluffy dough. We like to tuck into these when they're still warm from the oven but they taste great cold too. She's used burger sauce in this recipe, but feel free to swap it for a tomato or even barbecue sauce if that's what your family prefer.

Method

Making the dough
1

You may choose to make it in your bread maker, in the cake mixer or by hand.

2

Bread Maker – choose the dough setting. It will knead it and allow the dough to rise once.

3

Cake mixer – place all the dough ingredients in the cake mixer with the dough hook attachment. Knead until the dough is elastic and smooth. Cover with a damp tea towel and allow to rise in a warm spot.

4

By Hand – Place all the ingredients in a large bowl and combine. Use clean hands to kneed the dough on a clean floured surface. Knead until the dough is smooth and elastic. Place back into the bowl (cleaned and oiled) cover with a damp tea towel and allow to rise in a warm spot.

5

While the dough proves, cook the mince.

For the mince
1

Mix the brown sugar and soy sauce in a small bowl until the sugar dissolves.

2

Heat a pan over medium-high heat and add a good glug of oil. Once the oil is hot, add the beef mince. Use a wooden spoon to break the mince apart as it cooks. Cook until the beef is browned (about 5-7 minutes).

3

Push the browned beef to one side of the pan and add the crushed garlic to the other side. Sauté the garlic in the oil for about 1 minute until fragrant, then mix it into the beef.

4

Pour the soy sauce and brown sugar mixture over the beef. Stir well to coat all the mince evenly. Cook for 2-3 minutes, letting the flavours meld and the sauce thicken slightly.

Constructing the burger scrolls
1

Once the dough has risen to double its size, punch it down with a clean hand and turn out onto a clean, floured surface. Preheat your oven to 200℃.

2

Use a rolling pin to roll a rectangle shape (about 40cmx20cm). Spread an even layer of tomato relish over the dough.

3

Sprinkle the cooked mince evenly on top, followed by the chopped gherkins and grated cheese. Lastly top with a drizzle of burger sauce.

4

Tightly roll the dough up into one long sausage. Divide into twelve equal pieces and place into a lined roasting dish, spaced slightly apart for expansion.

5

Bake for 20-25 minutes or until the scrolls are golden brown and cooked through.
