Packed with umami, these delicious blended beef and mushroom burgers are a great alternative to an all-beef patty. For a denser, more ‘meaty’ mouthfeel or texture, you can leave out the breadcrumbs and eggs from the recipe.

Packed with umami, these delicious blended beef and mushroom burgers are a great alternative to an all-beef patty.
Ingredients
250g Quality Mark beef mince
blended with mushrooms250g Meadow Mushrooms
to blend with mince½ onion
grated1 egg
beaten1 ½ cups breadcrumbs
2 Tbsp parsley
finely chopped1 Tbsp Worcestershire sauce
1 tsp kosher salt
½ tsp ground black pepper
6 burger buns
toastedlettuce
tomato
cheese
coleslaw
dill pickles
Method
Finely chop the mushrooms (or blitz in the blender) to replicate mince, then combine with mince, onion, breadcrumbs, egg, parsley, Worcestershire sauce, salt and pepper in a bowl mixing well with your hands.
Form into 6 patties.
Heat the plate of a barbecue or some oil in a frying pan over a high heat, add the patties and cook, turning once to desired doneness, about 3 minutes each side, but this will depend on the thickness of your patty. Do not press the patty down when cooking, this squeezes out juices.
If you like melted cheese in your burger you can add a slice of cheddar when you have turned the patty and it will melt as you finish cooking.
Reheat your pan on medium and brush the cut sides of buns with butter. Cook the buns until lightly browned and crisp.
Spread your favourite burger sauces (think aioli, tomato, BBQ, or mustard) on the bottom of the buns and place patties on them.
Layer the burger with a selection of your favourite fillings and enjoy.
