Beef cups and wedges
2 Tbsp olive oil
400g lean Quality Mark beef mince
1 tsp paprika
400g kūmara
cut into wedges
1 onion
diced
2 garlic cloves
crushed
1 carrots
grated coarsely
½ tsp ground cumin
400g tin diced tomatoes
400g tin black beans
strained
1 cup chopped fresh coriander
Salsa
3 tomatoes
diced
½ cucumber
diced
1 spring onion
chopped small
1 avocado
diced
1 Tbsp olive oil
1 Tbsp lemon juice
¼ cup fresh coriander leaves
To serve
8 iceberg lettuces
leaves
1/4 cup aioli
or tomato sauce
Method
For the beef cups and wedges

Preheat the oven to 180°C.

Place the kumara into an oven-proof tray. Drizzle with one tablespoon of oil and ½ tsp paprika, tossing together. Bake for 25 minutes until crispy.

Heat one tablespoon oil in a large frying pan. Add the onion, garlic, and carrot, and cook for 3 or 4 minutes. Add the mince browning all over.

Pour in the tomatoes and black beans. Simmer for 10 minutes until most of the liquid has evaporated.

Stir the cumin and the rest of the paprika through the meat.

Combine the salsa’s tomatoes, cucumber, spring onion, avocado, olive oil, lemon juice, and coriander.

To serve, place the lettuce cups on a platter. Fill with mince mixture and top with salsa. Serve with wedges with aioli or tomato sauce.
