Ingredients

Koftas
  • 600g Quality Mark beef mince

  • 1/4 cup finely chopped parsley

  • 1 tsp ground coriander

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1/3 tsp salt and pepper

Batter
  • 200g plain flour

  • 200ml milk

  • 100ml water

  • 4 eggs

  • 1 tsp baking powder

  • 1/4 cup olive oil

  • 2 red onions

    halved and sliced thinly

Preheat the oven to 220°C and place a baking tray on a rack inside.

Batter: Combine the flour, milk, water, eggs, and baking powder in a bowl and mix well. Set aside to rest for 20 minutes while you make the koftas.

Koftas: Place the NZ Beef mince, parsley, coriander, cumin and paprika in a bowl. Add a couple of grinds of salt and pepper and mix until well combined. Shape the mixture into 8 pointy-ended beef koftas (each around 7cm long) and set aside.

Remove the baking tray from the oven, add the ¼ cup of olive oil and return to the oven for 5 minutes.

Then, add the sliced red onions to the tray, mix gently through the heated oil and bake for 5 minutes, turning halfway through.

Add the koftas to the tray and cook for 5 minutes.

Remove the tray from the oven, quickly pour in the batter, and bake for 20 minutes or until the pudding is crispy, golden and doubled in size.

Remove and serve with a lovely garden salad filled with leafy greens and cucumber ribbons.
