Ingredients
Asparagus Salad
3 bunches asparagus

woody ends removed
olive oil
to brush the asparagus before serving
Garnish
1 lemon
cut into wedges
100g almonds
roughly chopped and toasted
Method
Asparagus Salad

Remove woody part of the stem and if desired, peel the asparagus.

Bring a large pot of salted water to the boil and blanch the asparagus.

Plunge into iced water to cool and set aside.

When ready to serve, grill the asparagus on a hot plate or BBQ grill until tender (about 3-5 minutes) and the asparagus are decorated with the grill marks.

Once grilled, brush the asparagus with olive oil and arrange on a serving platter.

Scatter the toasted almonds over the asparagus and arrange the lemon wedges around the sides.

Can serve with a wedge of lemon or can also dress this salad with the vinegar and honey dressing.
