You know what’s better than croquettes? Crispy air-fried croquettes that are stuffed with leftover beef cheek, beetroot, and goat’s cheese! These little bites are the perfect mix of crispy, creamy, and full of flavour, and the air fryer makes them golden and crunchy without the extra oil. Great as a fancy snack, a starter, or even for meal prep—just try not to eat them all at once.

Ingredients

  • 250g mashed potatoes

  • 50g feta cheese

  • 100g beetroot

    diced
  • 2 Tbsp fresh thyme leaves

  • 200g Quality Mark beef cheeks

    cooked
  • 1 egg

    whisked with a splash of water
  • 1 cup seasoned flouri

  • 1 cup breadcrumbs

Method

Mash together the potato and goats cheese. Mix in the beetroot, thymes leaves and beef cheeks – your hands might be the best tool.

Coat each log in the flour, then the eggs and into the breadcrumbs. Repeat with the remaining logs and onto a baking tray.

Heat the air fryer to 200˚ celcius

Spray the basket with oil and add the croquettes evenly spaced out – you might need to do this in batches.

Air fry for 5-7 minutes or until golden and crispy, gently shaking the basket halfway.

Let cool a little and then serve with a great dipping sauce (a horseradish spiked yoghurt is great) or a drizzle of hot honey for that sweet spicy vibe.

Pro tips:

  • Use whatever leftover pulled beef you have - slow cooked chuck is great too
  • The ratio is 2:1 of starchy vegetable to pulled meat.
  • Try these with mashed kumara and cheddar cheese instead of potato and feta.
