Wok fried diced beef steak with black pepper sauce

This delicious black pepper sauce is sure to keep the whole family happy. Pair with rice or vegetables for a winning meal.
Ingredients
500g Quality Mark sirloin steaks
1 capsicum
seeded and diced1/2 onion
diced2 garlic cloves
sliced2cm fresh ginger
sliced1 Tbsp vegetable oil
1 Tbsp cornstarch
mix with 1/2 cup water
1 tsp kosher salt
1/4 tsp white pepper
1.5 tsp sugar
1 Tbsp soy sauce
2 Tbsp oyster sauce
1/2 Tbsp sesame oil
1 Tbsp Hua diao wine
1/2 tsp cornstarch
1 Tbsp vegetable oil
1 tsp sugar
1.5 tsp oyster sauce
1 tsp soy sauce
1 Tbsp dark soy sauce
1/2 tsp ground black pepper

Method
Wash the sirloin steak, using kitchen paper to dry off excess water.
Trimming off excess fat, dice the beef into inch long cubes.
Place the diced beef into a large bowl, adding in white pepper, sugar, soy sauce, oyster sauce, sesame oil, Huadiao wine and cornstarch.
Massage well by hand for about 2 minutes, then mix in the vegetable oil and set aside for 15 minutes.
Combine all the black pepper sauce ingredients in a small bowl, set aside.
Preheat a frying wok to high heat, add a dash of oil and heat to about 140 degrees, add the beef and fry until all sides are browned.
Remove beef from the wok and filter the oil.
Use the remaining oil in the wok to fry the garlic, ginger, capsicum and onion until soft, then plate them.
Return the beef to the wok, add the black pepper sauce and drizzle in 2 teaspoons of starch slurry.
Continue sauteing until sauce becomes cohesive and plate atop the cooked vegetables.
Before serving, sprinkle with white sesame seeds.
