We love steak and sirloin steak is one our favourites.

Paired with an easy herb-loaded green sauce, this is a simple dinner that the family will love. Perfect on the barbecue, it's an easy dinner to entertain with too - make the slaw ahead of time and keep the dressing separate until right before serving. Easy to prepare and full of bold flavours, it's a fresh take on a classic.

Ingredients

Steaks
  • 4 Quality Mark sirloin steaks

    excess fat removed
  • 600g new potatoes

Green sauce
  • 1 cup spinach leaves, blanched

  • ½ cup parsley

  • 1 garlic clove

    chopped
  • 1 anchovy fillet

  • 1 Tbsp lemon zest

  • ¼ cup lemon juice

  • ¼ cups olive oil

Slaw
  • ¼ green cabbage

    shredded
  • ¼ red cabbage

    shredded
  • ½ bulb fennel

    sliced thinly
  • 1 Lebanese cucumber

    sliced
  • ¼ tsp salt

  • 1 Tbsp olive oil

  • 1 Tbsp lemon juice

Method

Firstly, make the green sauce. Place the spinach, parsley, garlic, anchovy, zest, juice, and olive oil in a blender. Blitz until well combined.

Cook the potatoes in salt boiling water until soft. Crush lightly with a fork.

Heat a barbeque to a medium heat. Depending on the thickness, cook the steak for 3 or 4 minutes on each side. Rest for a few minutes before slicing.

Combine the cabbages, fennel, cucumber, salt, olive oil and lemon juice in a large bowl and toss together.

Serve the potatoes, slaw and steak with a drizzle of sauce.
