Pistachio and mint koftas with hummus sauce

Lamb, pistachio and mint combine for a Middle eastern inspired kofta that is perfect for the barbecue and sharing with mates. We love it with hummus to dip or even a white bean and lemon dip.

Ingredients

Koftas
  • 500g Quality Mark lamb mince

  • 2, peeled and chopped onions

  • 5-6, deseeded green chillies

  • 3-4 garlic cloves

    finely chopped
  • 1/4 cup, chopped parsley

  • 1/4 cup, chopped mint leaves

  • 1 tsp ground allspice

  • 1 tsp cinnamon

  • 1 cup pistachio nuts

Hummus Sauce
  • 200g hummus

  • 2-3 tablespoons lemon juice

  • 2 tablespoons finely chopped parsley

    or coriander
  • 1/2 teaspoon finely grated lemon zest

Tomato Salsa
  • 2 large vine tomatoes

    diced
  • 10 black olives

    pitted and chopped
  • 1 Tbsp extra virgin olive oil

  • 1 tsp balsamic vinegar

Method

To Make Koftas

Finely chop the onions in a food processor.

Pulse in the chillies, garlic, parsley, mint, allspice, cinnamon and egg, and process to make a smooth mixture.

Season generously with salt and pepper.

Add the lamb and pulse to make a smooth mix.

Pulse in the pistachio nuts.

Mould the mixture evenly onto the ends of metal skewers.

Grill under a high heat for 10 minutes, turning regularly until brown and cooked.

Alternatively, barbecue on a lightly greased hot barbecue plate, turning regularly.

Serve the lamb over slices of tomatoes, a few olives and drizzled with olive oil.

Accompany with Hummus Sauce and Tomato Salsa.

To Make Hummus and Salsa

To make the hummus sauce mix the lemon juice, rind and parsley into the hummus.

Tomato Salsa - Mix together tomatoes, olives, olive oil and vinegar. Season with salt and pepper.
