These salad bowls combine the goodness of New Zealand lamb, cannellini beans, quinoa and fresh salad with the tastiness of tzatziki and crumbled feta.
All that protein will keep you full and support the day's activities.

Ingredients
Meatballs
300g Quality Mark lamb mince
handful fresh herbs

1 tsp onion powder
1 tsp garlic powder
pinch salt and pepper
1 Tbsp olive oil
Tzatziki
1 cup plain unsweetened yoghurt
2 Tbsp lemon juice
½ cup cucumber
diced
handful fresh herbs
chopped - such as mint, parsley, coriander
1 Tbsp crushed garlic
pinch salt and pepper
Salad
1 can cannellini beans
drained
2 cups quinoa
cooked according to packet instructions
2-3 handfuls baby spinach leaves
feta
crumbled
½ cucumber
sliced
handful cherry tomatoes
halved
fresh herbs
to garnish

Combine the lamb mince in a large bowl with fresh herbs, garlic, onion, salt and pepper. Roll into walnut-sized balls.

Heat a frying pan with a dash of oil and cook meatballs until browned on all sides.

Mix the tzatziki ingredients together in a small bowl.

Arrange the salad ingredients in bowls then top with tzatziki and meatballs with a sprinkle of fresh herbs to serve.
