Ingredients

Meatballs
  • 250g Quality Mark beef mince

  • 1/2 cup fresh breadcrumbs

  • 1 egg

    beaten
Pizza dough
  • 1 packet dried baker's yeast

  • 1 cup water

    warm
  • 1 tsp white sugar

  • 3-4 cups white flour

  • 2 Tbsp olive oil

  • 1 garlic clove

    crushed
  • 1 Tbsp chopped fresh oregano

  • 1 Tbsp dried basil

  • 1 tsp salt

Sauce
  • 6 Tbsp tomato paste

  • 2 garlic cloves

    crushed
  • 1 Tbsp chopped fresh oregano

  • A pinch of black pepper

  • 1 Tbsp sea salt

  • 2 cups grated Mozzarella cheese

Method

To Make Dough
1

In a large bowl, mix yeast, warm water and sugar.

2

Leave somewhere warm for the yeast to activate.

3

Once it froths, add 3 cups of flour, oil, garlic, herbs and salt and mix well. Form a dough.

4

Flour your hands, and knead dough on a clean work bench until it becomes elastic and smooth. This should take around 5–7 minutes.

5

If mixture is too wet, add more flour a tablespoon at a time.

6

If too dry, add a little water or oil.

7

When you are satisfied that dough is looking good, oil a clean bowl, add dough, cover with a tea towel and set aside to rise in a warm place.

8

It should take about 30 minutes to an hour, depending on room temperature.

To Make Topping
1

Make the sauce and meatball topping while you are waiting for the dough to rise.

2

Mix mince, breadcrumbs, salt and pepper and beaten egg until well combined.

3

Form a teaspoon of mixture into a ball, set aside and repeat until all used up.

4

For the sauce, simply mix the tomato paste with garlic, dried herbs, black pepper and salt.

To Assemble
1

Dust a baking tray with flour and polenta if you have it (for a crusty bottom).

2

To make mini pizzas, break off small pieces of dough, roll each into a ball and then flatten gently with your fingers to the desired size and thickness.

3

If making one large pizza, place dough in the centre of the tray and gently stretch and press into the desired shape and thickness.

4

Cover your bases with the tomato sauce.

5

Dot with meatballs and then sprinkle generously with mozzarella.

6

Bake in a hot oven at around 200 °C until the cheese is golden brown and the meatballs are cooked through (around 30 minutes).

7

Top with a sprinkling of your favourite microgreens.
