Ingredients

  • 500g Quality Mark lamb leg steaksi

  • 2 Tbsp olive oil

  • ½ tsp salt

    plus extra to taste
  • 1 Tbsp crushed garlic

  • ½ cup sun-dried tomato

    roughly chopped
  • 1 tsp dried oregano

  • 1 tsp paprika

  • 1 red capsicum

    diced
  • 1 cup orzo

  • 2 cups beef stock

  • 1 tsp Dijon mustard

  • 3⁄4 cup cream

  • 2 handfuls baby spinach leaves

  • ½ cup, plus extra to serve Parmesan cheese

    grated
  • salt and pepper

    to taste
  • ½ head broccoli

    cut into florets and steamed

Method

1

Season the lamb with salt. Heat the olive oil in a large, heavy-based pan with a lid over a high heat. Once it is hot, add the lamb and sear for about 2 minutes on each side until a brown crust is formed.

2

Remove the lamb from the pan and set aside. Turn down the heat to medium and add the garlic, sundried tomatoes, oregano and paprika. Stir for 2 minutes and then add the chopped capsicum, cooking for about 4 more minutes.

3

Add the orzo pasta, beef stock, dijon mustard, and cream. Bring it to a gentle simmer.

4

Cover and cook for 15 minutes or until the orzo is fully cooked. Remove the lid and stir frequently to prevent it from sticking to the bottom of the pan.

5

While the pasta is cooking, slice the lamb into thin strips. They should still be quite rare in the middle.

6

Remove the lid from the pan and add the lamb back in. Stir through the pasta and allow it to cook for 2 minutes.

7

Remove the pan from the heat and stir through the spinach and parmesan. Season to taste with salt and pepper.

8

Serve in a bowl with steamed broccoli on the side and a sprinkle of parmesan on top.
