This light and healthy, yet satisfying, open-faced sourdough sandwich recipe features smashed avocado, crumbled feta, pan-fried cherry tomatoes, spinach, and either a gourmet lamb or lite beef patty (depending on what mood you're in).

Ingredients
4 Angel Bay Premium Angus Beef Pattiesi
1 cup baby spinach
12 cherry tomatoes
blacken the skins4 slices sourdough
1 cup baby spinach
2 avocados
smashed80g feta cheese
crumbedolive oil
kosher salt
black pepper
Method
Pan fry the Angel Bay Gluten Free patties from frozen on a medium heat for 13-15 minutes, turning every 3-4 minutes.

Cut and scoop avocados into a bowl then smash with a spoon.
Crumble feta.
In a hot pan throw in cherry tomatoes and blacken the skins.
Start with a slice of sourdough then apply a generous amount of smashed avocado followed with spinach, patty, crumbled feta, 3 tomatoes, and salt & pepper.
Finish with a drizzle of olive oil.
