Ingredients

Lamb skewers
  • 800g Quality Mark lamb leg steaks

  • 1 Tbsp paprika

  • 1 tsp turmeric

  • 1 tsp red curry paste

  • sea salt

  • black pepper

Salsa
  • 6 nectarines

    stoned and finely diced
  • ½ cup fresh mint

    chopped
  • ½ red onion

    finely diced
  • 1 cucumber

    deseeded and finely diced
  • ½ red capsicum

    finely diced
  • red chilli i

    finely chopped
  • juice of 1 lime

  • salt and pepper

Method

Trim any excess fat and sinew off the meat and dice it into 2cm cubes.

Sprinkle over the spices, salt and pepper and add the curry paste. Mix well, ensuring all of the meat is well coated.

Thread the meat onto skewers and place to one side whilst you prepare the salsa.

To make the salsa simply mix all the ingredients in a bowl.

Heat a BBQ or grill up to a high heat. Cook the kebabs until golden brown all over and the meat is cooked through but still juicy.

Rest the meat for 10 minutes before serving alongside the nectarine salsa.
