200ml coconut milk

Thai carrot slaw

1 Tbsp Thai sweet chili sauce

2 Tbsp lime juice

1 tsp fish sauce

a dash sesame oil

2 large carrots

julienned

2 spring onions

handful fresh coriander

1 handful fresh mint

Coriander and lime broccoli:

roughly chopped into florets

1 Tbsp lime juice

1 Tbsp fresh coriander

For the lamb shanks

For the slaw

For the broccoli

Drizzle the soy sauce over the Lamb shanks.

Heat the pan and brown the lamb shanks, for about 10 minutes.

Place them into a crockpot or slow cooker.

In the same pan add the chopped onion and add sliced garlic, cook until golden.

Add the onion and garlic to the lamb shanks.

Add satay sauce and 200ml coconut milk.

Cover and cook on high for 4 hours or 6 hours on low, until tender.
