Ingredients
1 pack (400g) Silver Fern Farms Lamb Medallioni
2 Tbsp olive oil
½ cup mint leaves
chopped coarsely¼ cup white wine vinegar
2 Tbsp raspberry vinegar i
1 Tbsp lemon juice
2 Tbsp raspberry jam
seasonal vegetables

Method
Coarsely chop the mint leaves into a bowl.
Add the vinegars and lemon juice.
Stir in the raspberry jam.
Season to taste and set aside.
Remove Silver Fern Farms Lamb Medallions from the fridge and packaging and allow to bloom at room temperature for 10 minutes.
Drizzle lamb with olive oil and season with salt and freshly cracked pepper.
Pan fry medallions over a medium-high heat for 3-4 minutes each side.
Remove from pan, cover with foil, and leave to rest for 5 minutes.
Deglaze the pan which you have fried the lamb in with the raspberry mint glaze.
Allow mixture to reduce for 2 minutes.
Return any juice from the resting meat to the glaze mixture.
Serve lamb medallions drizzled with the glaze and your choice of steamed seasonal vegetables.
