1 pack (400g) Silver Fern Farms Lamb Medallion

2 Tbsp olive oil
½ cup mint leaves
chopped coarsely
¼ cup white wine vinegar
2 Tbsp raspberry vinegar

1 Tbsp lemon juice
2 Tbsp raspberry jam
