This schnitzel recipe is a game changer. We’re talking about tender New Zealand beef schnitzel, stuffed with creamy cottage cheese and spinach, cooked in the air fryer. It breaks the predictable mould that schnitzel can end up in and gives you a tasty, easy weeknight dinner. These roulades are all about rolling up big flavour in a neat little package. The cottage cheese filling keeps everything juicy and rich in a healthy way.

Ingredients
300g Quality Mark beef schnitzels
pounded thin if needed½ cup cottage cheese
1 cup baby spinach
roughly chopped1 Tbsp Parmesan cheese
grated1 garlic clove
minced1 tsp Dijon mustard
1 Tbsp fresh thyme
salt and pepper
to seasonolive oil
spray or brush ontoothpick
or small skewers for securing
Method
Preheat your air fryer to 180°C.
In a small bowl, mix cottage cheese, spinach, garlic, herbs, parmesan, mustard, and a pinch of salt and pepper.
Lay out schnitzel slices on a board. Spread 1–2 tablespoons of filling over each. Roll tightly from the short end and secure with a toothpick or small skewer.
Spritz the outside of each roulade lightly with olive oil. Season and then place in a single layer in the air fryer basket.
Cook for 12–15 minutes, turning halfway, until golden and cooked through.
Let rest 2–3 minutes. Slice roulades into spirals to serve.
Serve with a dollop of the cheats romesco sauce and a sprinkle of fresh herbs on top. A big green salad on the side doesn’t go astray either.
