If you can't get ahold of finger ribs, short ribs are the perfect substitute.

Method

For the beef ribs

Preheat the oven to 140ºC.

In a large bowl season the ribs with salt, a generous grind of black pepper and the Chinese five spice, ensuring they are well coated.

Place the ribs into an oven proof dish that fits them snugly in one layer.

Pour over the soy sauce and the beef stock.

Cover the dish tightly with a double layer of tin foil and place into the oven to cook for 4 hours, until the meat is meltingly tender.

Remove the ribs from the tray, and allow them to cool. They can be stored in the fridge for up to 4 days until you are ready to finish cooking them and serve.

To finish the ribs, heat a barbecue on a medium to low heat.

Grill the ribs on the bbq gently to crisp them up and render any remaining excess fat.

Be careful not to burn them, a lower heat is important here.

When the ribs are nice and crispy on the outside, remove them from the heat and brush with barbecue sauce.

Serve sprinkled with chopped spring onions, fresh chilli, sesame seeds and extra barbecue sauce for dipping.
