Beef shin laksa

Laksa is a fragrant, spicy noodle soup packed with flavour. Traditional laksa broth is made with laksa paste, shrimp paste, coconut milk, and spices. If you don’t have laksa paste, a great shortcut is using Thai red curry paste for a quick and easy alternative. We love this slow cooked with beef shin slices on the bone but gravy beef is equally as delicious.
Ingredients
1 kg Quality Mark beef shin
2 Tbsp oil
1 onion, brown, flesh, fresh, raw
thinly sliced¼ cup Thai basil leafi
chopped, plus extra to serve¼ cup Laksa paste
1 Tbsp cornflour
400ml coconut milk
1 ½ cups Campbell’s Real Beef Stock, salt reduced
1 ½ cup water
2 Agria potatoes
peeled, cut into 3cm pieces250g snow peasi
trimmed1 red capsicum
roughly chopped270g udon noodles
cooked according to packet instructions1 cup mung bean sprouts
2 Tbsp peanuts

lime
cut into wedgesfresh coriander leavesi

Method
Heat 1 tablespoon of oil in a fry pan to high heat, add half of the beef and cook, turning, for 5-6 minutes or until browned; season to taste.
Transfer to a plate. Repeat with 1 tablespoon of oil and remaining beef until it's all seared.
In the same fry pan, add onion, basil and paste. Cook for 3-4 minutes or until onion has softened.
Scatter over cornflour and cook, stirring, for a further 1-2 minutes
Place the onion, basil, paste and browned beef into the slow cooker.
Stir in coconut milk, stock, water and potato. Cover with lid and select low and cook for 8 hours
Meanwhile, cook udon noodles according to packet instructions. Cool under running cold water and set aside until required.
Before serving, remove the lid and stir through snow peas and capsicum; season to taste and stand for 5 minutes or until snow peas are cooked.
Place the desired amount of noodles in your bowls and spoon over laksa.
Divide the beef and broth among bowls and serve with a handful of the bean sprouts, crushed peanuts, lime wedges, herbs and sliced chilli
What noodles are best in a laksa?
Laksa is a flexible dish when it comes to noodles! While egg noodles or laksa noodles are the most traditional, rice noodles, ramen, or even udon can be used. Choose your favourite and enjoy a bowl of this comforting, flavour-packed soup.


Can you swap the beef shin for something else?
We love the richness that beef shin brings to this slow cooked laksa, but feel free to swap with gravy beef or diced bolar roast. Beef cheeks work well too but the cook time will be a little longer to help them become more tender.
