Ingredients

  • 250g Quality Mark beef mince

  • 3 onions

    finely sliced
  • 2 tsp salt

  • 2 tsp brown sugar

  • 2 tsp balsamic vinegar

  • 1 garlic clove

    crushed
  • 1 tsp tarragon

    dried
  • 1 Tbsp dried basil

  • 125g goats cheese

  • 1 Tbsp chives

  • 2 sheets flaky pastry

Method

To Make Filling
1

Preheat oven to 180°C.

2

Caramelise your onions first.

3

In a frying-pan with a tiny splash of oil, stir onions together with salt for around 30 minutes, over a gentle heat.

4

The onions will soften and change colour. Never turn up the heat as you’ll burn them.

5

Add sugar and vinegar and stir gently as the onions finish their caramelisation.

6

They’re perfect when they are dark brown and glossy. Set aside.

7

In a separate pan heat a splash of oil and gently fry garlic until fragrant, then add beef mince.

8

Brown beef and then add herbs, stirring through thoroughly.

9

Season with salt and pepper to taste and remove from heat.

10

Whip cheese and chives together into a paste.

To Assemble
1

Grease a muffin tray.

2

Cut pastry cases and place into your muffin tray.

3

Spoon a little cheese mixture into each pastry case.

4

Sprinkle meat mixture over cheese and then top with a generous dollop of caramelized onions.

5

Bake for 15–20 minutes or until the pastry is golden around the edges.

6

Serve on their own, or with a green side salad and tomato sauce or fresh chutney.
