Loaded with tender beef, beans and eggs, this shakshuka is high protein fuel that everyone will love. The shortcut to flavour? Beans in chilli sauce are convenient, affordable and nutritious. We love the low sodium options to make sure we're staying on track. Serve with feta cheese and fresh parsley sprinkled over the top and warmed ciabatta on the side.

50gm feta cheese

In a large cast iron pan, heat a little olive oil and gently sauté the onion and garlic with the spices.

Add your capsicums and cook for 5 minutes. Remove from the pan and add your mince.

Cook for 5 minutes, breaking up the mince into pieces.

Add your tomato paste and canned tomatoes. Using a wooden spoon, gently crushed the tomatoes to create a thicker sauce.

Add the canned beans in chilli sauce and the sautéed vegetables back in. Bring the heat up until it’s bubbling away and cook like that for a few minutes until thickened.

Make a few dents in the mixture and crack the eggs in. Cover the pan with a lid and cook until your eggs are cooked through (it should take about 6 minutes).

Scatter over the top feta cheese, fresh herbs and serve immediately with toasted ciabatta on the side.
