This air fryer beef and bean burrito recipe is simple, delicious, and perfect for a quick lunch, dinner, or meal prep. Air frying uses hot air circulation to cook food evenly, creating a crispy exterior while keeping the filling warm and flavourful. Air fryer burritos require less oil, making them a healthier alternative to deep-fried versions. Use whole wheat tortillas for a healthier option and avoid overfilling to prevent splitting or the filling from leaking.

Ingredients

Mince
  • 500g Quality Mark beef mince

  • 1 onion

    diced
  • 2 garlic cloves

    minced
  • 1 tsp paprika

  • 1 tsp dried oregano

  • 1 tsp ground cumin

  • 1 Tbsp Spicy sweet blacksauce by Wild West Gourmeti

  • 400g canned tomatoes

  • 400g Beans in chilli sauce

To serve
  • 1 cup white rice

  • 4 tortillas

    large
  • ½ cup grated tasty cheddar cheese

  • 1 avocado

    sliced
  • 1 red capsicum

    diced
  • Handful fresh coriander leaves

Method

In a large frying pan, heat a little oil and then add your mince, breaking it up as it cooks.

Once browned, add your onion, garlic and spices and cook until translucent.

Add in your tomatoes, blacksauce and beans; reduce the heat and leave to bubble away until thickened.

Take a tortilla, add a spoonful of rice, mince mixture, sprinkle of cheese, slices of avocado and some diced capsicum.

Add in coriander and fold in the sides of the tortilla.

Roll tightly from the bottom to encase the filling. Continue with the rest of the tortillas and filling.

Preheat your air fryer to 190 degrees for 5 minutes.

Place the burritos in the basket seam side down and cook for 3 minutes until golden and crisp.

PRO TIPS:
  • You can make the mince ahead of time, double the recipe and freeze it so these are just a matter of assembly in the future.
  • Make up a large jar of the spice mix so you’ve got this on hand whenever you need
  • If you don’t have an Air Fryer but still have a hankering for burritos, use a cast iron skillet. Preheat it for a few minutes and once hot, place the burritos in seam side down and cook for a few minutes each side until crisp and golden.

  • ½ cup unsweetened Greek yogurt
  • ¼ cup mayonnaise
  • 1 chipotle pepper from a can of chipotles in adobo sauce
  • 1 garlic clove, peeled and minced
  • 1 tsp lime juice
  • 1 tsp extra-virgin olive oil
  • 1 tsp honey or maple syrup
  • Sea salt and freshly ground black pepper to season

Throw everything into a blender and mix for a few minutes, then serve with the burritos to dip in.
