Kick off the party with these simple loaded bruschetta that makes the most of a pottle of cottage cheese and tender strips of steak. We love it with a dark rye bread - the wholegrain goodness is the perfect backdrop for all the toppings. But a good quality bread stick works wonders too - we love it when they're fresh from the bakery.

Balsamic glaze is easy to find in the supermarket in the vinegar aisle and keeps forever. Its adds a touch of sweet pickled flavour that is undeniable.

Bruschetta

1 french stick bread

2 tsp extra virgin olive oil

1 cup cottage cheese

2 Tbsp lemon zest

arrow

2 tsp dried oregano

300g Quality Mark beef steaks

cooked to your liking

200gm rocket

A drizzle balsamic syrup

to serve

Slice your bread into rounds, brush with olive oil and grill in a hot oven until golden and toasted.

Remove and keep aside for assembly.

In a blender, blitz the cottage cheese, lemon zest and oregano until smooth and creamy.

Thinly slice your steak against the grain.

Now for assembly: spread a little whipped cottage cheese on the rounds of bread. Top with a handful of rocket, thin slice of steak and a drizzle of balsamic syrup.

Repeat until you've got a platter full.
