The steak is delicious eaten as it is, but we like to serve it with homemade garlic soy sauce or yuzu ponzu.

Ingredients
1 Quality Mark sirloin steak

score the fat
1 tsp wasabi paste
1/2 tsp brown sugar

Method
Wasabi Encrusted Sirloin

Bring steak to room temperature, season lightly with salt. Mix wasabi paste and sugar. Spread half the wasabi paste on the top of the steak, avoiding fat. Heat up a non-stick pan with a little oil over medium heat. Cook steak, wasabi facing down. As the wasabi browns, shake the meat and let it absorb the sticky wasabi.

While it’s cooking spread the top side with the remaining paste. Flip steak after 2 - 3 minutes and cook another 2 minutes until medium rare to medium - it depends how you like your steak. Remove from pan and rest for 10 minutes (under foil if you like to keep it warm).

Slice 1cm thick and serve with vegetables of your choice.
