A simple combination of flavours: lamb mince, herbs, feta cheese and a Turkish loaf, gives these burgers their delicious name. Mix up your toppings, we love tabbouleh and hummus and highly recommend a garlic ygohurt dressing too.

Ingredients

  • 600g Quality Mark lamb mincei

  • 4 spring onions

    finely chopped
  • 1 cup fresh breadcrumbs

  • 150g feta cheese

    crumbled
  • 2 garlic cloves

    crushed
  • 1 Tbsp fresh mint

  • 1 egg

  • 1 Turkish bread loaf

To serve
  • tabouli

  • mesclun

  • mint leaves

  • tomato

  • spring onion

Method

To Make Patties

Combine the lamb mince, onions, breadcrumbs, feta, garlic, mint and egg.

Mix lightly, shape into 6 patties.

Lightly brush the burgers with oil.

Preheat the pan to moderately high.

Add patties to the pan, lower the heat to moderate.

Cook for 5-6 minutes each side or until thoroughly cooked.

Turn them once only.

To Serve
1

Slice Turkish bread in half horizontally and grill or toast until lightly browned.

Place burgers on the toasted bread with tabouli and salad leaves, topped with chopped tomato, mint and spring onions.
