This is a quick throw together salad that is fresh and colourful and goes well with barbecued lamb or beef.
Ingredients
3 oranges
peeled and sliced12 Medjool datesi
halved and stoned2-4 cups baby spinach
12 olives
1 red onion
peeled and sliced1 Tbsp fresh thyme
chopped1 green chilli
deseeded and sliced
1/4 cup olive oili
2 Tbsp white wine vinegar
Method
Place the dates, spinach or baby salad leaves, olives, sliced red onion, thyme and chilli in a large bowl.
Season well with salt and pepper and toss.
Combine olive oil and vinegar in a jar to make the dressing and serve alongside or toss through the salad.
