Smokey beef and kumara burgers

Created in partnership with Dame Lisa Carrington, Angel Bay smokey BBQ beef patties are ones the whole family will enjoy. Smokey yet sweet, with the added pop of the occasional mustard seed. A little bit of Rum n Que blackout rub is the final touch to these delicious burger patties.

Ingredients
320g golden kumara
peeled and gratedA large handful chopped fresh parsley
1 egg
whisked with a fork½ tsp kosher salt
¼ tsp black pepper
2 Tbsp vegetable oil
4 Angel Bay Smoky Barbeque Beef Patties
4 brioche burger buns
4 Tbsp Apricot chutney
½ red onion
thinly sliced4 cheddar cheese slices
2 cups rocket
4 Tbsp aioli
Method
Place kūmara, herbs, egg, salt and pepper in a bowl and stir to combine well.
Heat half the oil in a large frying pan on medium. Spoon rosti mixture into pan (use 1/8 of the mixture per rosti) and spread out into a thin round.
Fry for 2-3 minutes each side, until golden brown and crispy.
Keep warm in oven while you cook remaining rosti, adding more oil as required.
Cook burger patties according to instructions on packet.
Slice burger buns in half and toast.
Spread the base of each bun with apricot chutney, then top with red onion slices, burger patties, smoked cheddar, two kūmara rostis and rocket.
Spread the top halves with aioli and top the burgers.
