Crispy spiced lamb mince, smashed cucumbers, and a cloud of creamy whipped feta for a meals that’s fresh, fast, and just the right amount of messy. Ingredients

  • 400g Quality Mark lamb mince

  • 1 Tbsp olive oil

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1 tsp honey

  • pepper

    to taste
  • 2 telegraph cucumbers

    cut into chunks
  • 250g cherry tomatoes

    halved
  • ½ red onion

    finely sliced
  • ½ cup fresh herbsi

    chopped
  • ½ cup olives

    pitted and roughly chopped
  • 150g feta cheese

  • ½ cup Greek style yoghurt

  • 1 Tbsp lemon juice

  • 1 Tbsp olive oil

To serve
  • Hot honey

  • 4 pita pockets

    cut into triangles

Method

Blend feta, yoghurt, lemon juice and olive oil until smooth. Spread thickly over the base of a large serving platter.

Heat olive oil in a large frying pan over medium-high heat. Add lamb mince, cumin, paprika, honey and pepper.

Cook, breaking it up until dark, crunchy bits form. Set aside to cool slightly.

On a board, lightly smash cucumber chunks with the side of a knife, or a rolling pin. You want to hit them just enough to crack them open, not split all over the kitchen.

Toss smashed cucumber, tomatoes, onion, herbs and olives with a splash of olive oil and a squeeze of lemon.

Pile the salad over the whipped feta, scatter over the crispy lamb crumbs, and drizzle with chilli oil or hot honey.

Serve immediately with pita triangles for scooping.
