If you're looking for a straightforward, yet flavourful dish, these sirloin steak bites with cowboy butter are just the thing. The steak cubes are cooked in a hot pan for that perfect caramelisation, and then tossed in a homemade compound butter made with garlic, Dijon mustard, fresh parsley, and a touch of tabasco for some heat. Serve the steak with warm tortillas and fresh lettuce so everyone can make their own little wraps. It’s an easy recipe that brings big flavours to the table, perfect for a relaxed dinner with loved ones. Pro tip: make double of the compound butter and freeze it for flavour boosting in easy future meals.

Ingredients

Steak
  • 600g Quality Mark sirloin steaks

    cut into cubes
  • salt and pepper

    to season
  • 2 tsp extra virgin olive oil

  • 10 small tortillas

  • lettuce leaves

    to serve
Cowboy compound butter
  • 150g butter

    softened
  • 3 garlic cloves

    minced
  • 1 Tbsp Dijon mustard

  • 1 Tbsp Tabasco sauce

  • 1 Tbsp chopped fresh parsley

  • 2 tsp fresh thyme leaves

  • 1 lemon

    zested
  • 1 tsp chilli flakes

  • A pinch salt and pepper

Method

Season the steak cubes and put them aside while you make the butter.

Combine softened butter, minced garlic, Dijon mustard, tabasco, chopped parsley, fresh thyme, lemon zest, salt, pepper and chilli flakes in a bowl.

Mix well to create the cowboy butter compound butter.

Place in the fridge to firm up for 30 minutes or so.

In a pan, heat the oil over a high heat and once hot, add your steak cubes.

Cook for 1 minute or so without moving them so they get a good caramelisation on the edge.

Toss or turn each cube and cook for another 2 minutes.

Remove them from the pan and continue until all the steak cubes are done.

Lower the heat right down and put a few tablespoons of the compound butter into the pan.

Stir so that it melts and then add the steak bites back in, tossing in the butter until they're coated.

Turn off the heat and let them rest for 3 minutes until serving.

Serve with small tortillas and lettuce for everyone to help themselves and if you like it, hot sauce on the side.
