Ingredients
120g rocket
1/4 rockmelon
chopped into 2cm chunks125g bocconcini
1/2 cup tamari almonds
roughly chopped
1/2 cup balsamic vinegar
1 Tbsp brown sugar
Method
To make the balsamic drizzle, mix the balsamic vinegar and sugar in a small pot over a low heat. Simmer for 5 minutes until thick and glossy. Set aside to cool.
Gently toss the leaves, rock melon, bocconcini and almonds together in a salad bowl.
Drizzle with the balsamic drizzle and serve.
