Ingredients
1 cup quinoa
cooked to package instructions1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1 tsp cumin seeds
1/4 red cabbage
finely shredded1 red capsicum
diced1 celery stalk
finely sliced1 carrots
grated1/2 red onion
finely sliced1 beetroot
grated2 handfuls fresh mint
chopped2 tsp pomegranate molasses
or pomegranate seeds1/2 orange
juice and finely grated rind3 Tbsp olive oil
1 tsp kosher salt
1 tsp ground black pepper
Method
Rinse the quinoa and then cook according to packet instructions, drain and then set aside.
Combine the pumpkin seeds, sunflower seeds and cumin seeds and lightly toast in a frying pan over medium heat, stirring continuously.
In a large bowl toss together the cabbage, capsicum, celery, carrot, onion, beetroot, seeds and quinoa.
Combine the mint, pomegranate molasses, orange rind and juice, 3 tablespoons of olive oil and salt and freshly ground black pepper together in a small bowl. Drizzle the dressing over the salad and serve.
