This incredibly easy Autumn salad comes together effortlessly, combining quinoa, fresh vegetables, and the bold flavour of feta. Rich in plant-based protein, it’s a nutritious and satisfying option for any time of day. For a complete meal, pair it with your favourite cuts of beef or lamb, boosting both animal and plant protein in one dish.

Ingredients
3 cups quinoa
3 carrots
shaved½ red onion
diced1 whole head broccoli
chopped into 1cm bites2 Tbsp raisins
parsley
or coriander, chopped3 Tbsp olive oil
2 Tbsp lemon juice
1 tsp Pepper & Me "Man Grind" Salt Blend
2 Tbsp Pepper & Me "The Mother Dukkah"
feta cheese
for garnish
Method
Add all ingredients to a large bowl and toss together.
Garnish with feta, more herbs and The Mother Dukkah.
