Quick, easy, and deliciously fresh. Enjoy these pulled lamb pitas for a weekend lunch, or to use up leftovers during the week. Any leftover roast lamb could be used for these easy Greek pita breads.

Ingredients

Lamb
  • a large handful of Quality Mark pulled lambi

    pre-cooked
  • 2 pita bread

Salad
  • 1/3 cucumber

    diced
  • 2 tomatoes

    diced
  • 1 Tbsp olive oil

  • 1/3 of a block feta cheese

  • 1 Tbsp lemon juice

  • 30g mint leaves

    chopped
  • 1/3 tsp kosher salt

  • 1/4 tsp black pepper

Yoghurt Dressing
  • 3/4 cup Greek style yoghurt

  • 1/3 cup lemon juice

  • 1/4 tsp garlic cloves

    crushed
  • 1/3 tsp kosher salt

  • 1/4 tsp black pepper

Method

Microwave the pre-cooked pulled lamb for 2 and a half minutes, stir and set aside.

Chop up all vegetables and feta and stir together with lemon juice and mint.

Fill pita bread with lamb and vegetable-feta salad and drizzle with yoghurt dressing. Warm the pita breads first if desired.
